Formula Sequence:

  • 1. Set the starter yogurt out at room temperature
  • 2. Using a double boiler, heat the milk to 185°F to re-pasteurize the yogurt
  • 3. Once the milk reaches the temperature or starts to froth, remove it from heat and allow the milk to cool to 110°F. Do not go below 90°F
  • 4. Stir in the starter yogurt that contains the cultures
  • 5. Keep the yogurt as close to 100°F as possible and undisturbed for seven hours, then refrigerate
