Dandelion Honey Predicted as 2013 Flavor Trend

Spring is right around the corner, and with that brings buds on trees, fresh grass and dandelions popping up in yards. Before you have the urge to mow down the yellow “weeds,” remember that they too are flowering plants with a purpose. In fact, Sensient Flavors, an Indianapolis-based flavor company, has named dandelion honey as a flavor trend for 2013.

According to SnackandBakery.com, the trend list was developed using Sensient’s “Trends to Taste” program, which is a predictive process that filters broad trends down to finished concepts. Dandelion’s nectar makes a varietal honey with mild sweetness and slight astringency.

The Flavor Trend Prediction list also includes blue honeysuckle berry. Trending flavors are inspired by comfort, connections, sensory, health and wellness.
